That is actually so cool, Wraya! What an amazing oppertunity! This must be very exciting for you.
You can always try checking out the "I Can Read" books ("Biscuit" the dog was my favorite when I was first begining to read!) or picture books with very minimal writing such as "Spot" (Another little dog I loved!) from your local library. This would be great for learning how to read, and books like "Spot" sometimes have little flaps and popouts, so that is pretty entertaining!
You can always print out simple writing exercises and have her do those. Make sure to help her out and guide her through, though.
It is very important that you are patient with her. I can't even imagine having to re-learn english, let alone another language (even though I take Spanish- it is an absolute PAIN lol)! You may have to repeat things several times over, and you have to be careful not to discourage her. I'm sure you will do fantastic, though!
Consider having a rewards system. It could be as simple as a little star sticker (what I wouldn't do for one of those when I was a kid!) or a piece of candy. You could have a small daily reward, and have a bigger reward (like a popsicle- and they are affordable!) at the end of a certain time period.
Depending on what time interval you choose, make sure you tak the appropriate breaks. For 30 minutes, not so much, but for an hour long, you should take a ten minute break halfway through.
