You've got to select any emoji of your choosing like normal. Next you've got to click and hold it for a minute. Then a message pops up. It'll be light gray. And you can change the size of it like and image. Hope I helped!

Yes!

You just double tap the emoji and it brings you to a thing (I dunno what it's called, probably like an editing menu or something x3)

And then you adjust the size :D
